Following the lead of the folks at Noble Cider (http://www.noblecider.com), I pimped my press by replacing the manual bottle jack with a pneumatic/hydraulic jack. AWESOME is the word! Much faster leaving hands free to do more important stuff like grinding more fruit or making the next set of cheeses.
I strongly recommend that you add an inline oiler to keep the jack happy.
